Maltitol is a kind of colorless, transparent and viscous liquid or white crystalline powder. It can be easily dissolved in water. It has a moderate sweet taste and the sweet intensity is lower than sucrose (75-90%).
Production: Maltitol is a kind of sugar alcohol made from starch through hydrolysis, hydrogenation.
Advantage: It is not metabolized by oral bacteria, so it does not promote tooth decay. It is somewhat more slowly absorbed than sucrose, which makes it somewhat more suitable for people with diabetes than sucrose. Its food energy value is 2.1 kilocalories (Cal) per gram (8.8 kJ/g); (sucrose is 4.0 Cal/g (16.7 kJ/g)).
Note: Like most sugar alcohols, Maltitol carries a risk of gastric distress, including flatulence and diarrhea, when consumed in large quantities.
