Sodium Acid Pyrophosphate also know as SAPP is a popular buffering / leavening agent and distinguished food additive with appearance of White Powder, with 95% purity, the molecular formula is Na2H2P2O7. It's soluble in water, insoluble in ethanol.
Sodium Acid Pyrophosphate mainly used in Baking powders, biscuits, canned food, instant noodles as binder, stabilizer, emulsifier.
