Sodium Carboxymethyl Cellulose also known as CMC is an anionic polymer compound, which is made by the reaction of natural cellulose, caustic alkali and monochloroacetic acid. It shows as white, liquid micro powder with the properties of non-toxic, odorless, tasteless, non-flammable.
CMC is synthesized by the alkali-catalyzed reaction of cellulose with chloroacetic acid. The polar (organic acid) carboxyl groups render the cellulose soluble and chemically reactive.
As a food additive, the functional properties of CMC depend on the degree of substitution of the cellulose structure (i.e., how many of the hydroxyl groups have taken part in the substitution reaction), as well as the chain length of the cellulose backbone structure and the degree of clustering of the carboxymethyl substituents.
CMC is widely used in food industry, it plays the role of taste improvement, thickening and stabilization reinforcement when used in various kinds of dairy beverages and seasoning. As an additive of molding, taste improving, water retaining and toughness strengthening,
CMC is also used in ice cream to reduce the appearance of large ice particles, in bread & cake, in the production of instant noodle and fast paste food, the addition of CMC can help to make the food retaining a strong cohesiveness, pulling, bending and reduces breaking, and can keep products away from air and keep it stored longer.
1. In Food Industry:
CMC is widely used as a stabilizer and a thickener in ice cream, beverages, canned food, fast cooking, jam, syrup, sherbet, dessert ...etc.
2. In Pharmaceutical Industry:
Medical Industry: emulsifying stabilizer for injection, tablet binder and film formers.
3. In Oil & Gas Industry:
As a stabilizer in drilling mud. It reduces drilling pressures.
4. In Other Industry:
CMC can be used in coatings, papermaking, cosmetics …etc.
