Introduction:

Sorbitan Tristearate (E492), also known as Span 65 as well as STS, is a nonionic surfactant used as an emulsifier and stabilizer in food.

Sorbitan Tristearate is produced by direct esterification of Sorbitol (a sugar alcohol) with stearic acid (a saturated fatty acid). Unlike Sorbitan Monostearate, which has one stearic acid molecule attached, Sorbitan Tristearate has three stearic acid molecules linked to the Sorbitan Molecule. The final product is a mixture of partial esters of sorbitol and its anhydrides with edible stearic acid.

Color and Gloss Maintenance in Chocolates: In chocolates, it maintains color and gloss.

Emulsification: Sorbitan tristearate acts as a water-in-oil (W/O) emulsifier.
