Soy Lecithin powder is soluble in hexane and ether, and partially soluble in organic solvents such as acetone and ethanol.Due to its hygroscopic and dispersive nature.

Oil Soluble type are most used for baking.

Water Soluble type are common used for milk powder, milk tea, drinking and so on.
