Leavening Agent

A leavening agent is a substance used in baking to promote the rising or fermentation of dough, resulting in light, airy textures in baked goods. Leavening agents work by releasing gases, typically carbon dioxide, which become trapped within the dough, causing it to expand and rise during baking. This process creates a porous structure in the dough, resulting in a soft, fluffy texture in the finished product. Common leavening agents include yeast, baking powder, and baking soda. Yeast is a microorganism that ferments sugars in the dough, producing carbon dioxide gas as a byproduct. Baking powder is a chemical leavening agent composed of a combination of baking soda, an acid (such as cream of tartar), and a moisture-absorbing agent (such as cornstarch). When combined with moisture and heat, baking powder releases carbon dioxide gas, causing the dough to rise. Baking soda, or sodium bicarbonate, reacts with acidic ingredients in the dough (such as vinegar or buttermilk) to produce carbon dioxide gas, resulting in leavening. Leavening agents are essential for achieving the desired texture and volume in a wide range of baked goods, including bread, cakes, muffins, and pancakes.
