Introduction:
Agar Agar is made from red seaweeds. When the red seaweeds are heated to melting condition, and after cooling it down, the seaweed extract is Agar Agar. It can't dissolve in cold water but can easily dissolve in boiling water and dissolves slowly in hot water.
Agar Agar contains rich dietary fiber (80.9%) with high protein and low calories. It has the function of controlling blood pressure and blood sugar, anti-cancer, promoting health and beauty. It is a natural food additive, which has been recognized as the healthy food of the 21st century. It is most widely used as a gel additive as thickener, coagulant, suspending agent, emulsifier, stabilizer & preservative.
Application:
1. In Food Industry:
- Thickener and Stabilizer: Instant soup, like Mixed Congee, seasoning, ice cream.
- Suspending agent: For beverage containing fruit granular. Jelly with fruits granular. Puddings, ..etc.
- Binder: Agar is widely used in meat can and meat related products, which can make the minced meat stay together.
- Clarifying agent: Agar is used in wine, beer industry, to speed up the clear condition.
